- 500gm Oyster or 150gm King Brown Mushrooms - slice lengthways
- Plain flour
- 1 cup bread crumbs (Panco is best)
- 2 eggs
- Olive oil
- Salt & Pepper
Dip each mushroom in egg, then roll in the flour, back in the egg and finally cover with breadcrumbs. It is best to prepare the mushrooms and place in the fridge for 1-2 hours.
To cook, place olive oil in a frying pan and cook over medium-high heat. Cook mushrooms in batches until golden brown, remove from pan and place on paper towel to remove any excess oil. Salt and pepper to taste. Great with sweet chilli sauce!
